My plan this week is to share a few fun and easy Forth of July cookie recipes, all that are perfect to bring along to your celebration. First is Reese’s Peanut Butter Cup Cocoa Krispy Treats. OMG… is right! I’m not kidding when I tell you that these will be loved by kids and adults alike. I tested them out at family gathering this weekend and they went over great! There were three other desserts and these were gone before any of the others were even touched. When I saw this recipe I immediately went out and bought all the ingredients. Some of my favorites…. peanut butter, chocolate and rice krispy treats all mixed in one! I couldn’t wait… Glad I put time in at the gym that day because there was plenty of snacking during preparation and for any of you who make rice krispy treats regularly I’m sure you’re with me when I tell you the best part is eating all the melted gooey remnants in the pot and on the spoon. The best!
If you need a fast yummy dessert these are perfect because they take no time at all to make. Enjoy!
REESE’S PEANUT BUTTER CUP COCOA RICE KRISPY TREATS
7 Cups Cocoa Krispy Cereal
1 (12 ounce) bag Reese’s Peanut Butter Cups Miniatures (approx. 38) Or 16-18 full size cups
5 Tbsp of butter or margarin
3 Tbsp of light karo syrup
1 (10 ounce) package of Marshmallows
2/3 Cup Peanut Butter (split)
1/2 Cup Chocolate Chips (split)
Grease a 9 x 13 inch pan with cooking spray, butter or margarin and set aside.
In a large bowl mix together cereal and diced Reese’s Peanut Butter Cups and set aside. * I cut the miniature’s into 3 pc’s each which seemed to work out fine, if using the full size peanut butter cups cut into approx 8 pc’s each.
In large pot melt butter and 1/3 cup of Peanut Butter over low heat. Add karo syrup and marshmallows and stir often until all the marshmallows are melted and mixture is smooth. Remove from heat and add cereal mixture to into pot. Fold in cereal mixture until cereal mixture is evenly coated. Don’t let this sit because the marshmallow starts to firm up fairly quickly. Pour mixture into prepared 9 x 13 pan and spread evenly by pressing the mixture throughout. Set aside.
Put remaining 1/3 cup of peanut butter in small microwave safe bowl and microwave for approx 30 seconds to melt. With a spoon, drizzle melted peanut butter over the rice krispy treats.
Put 1/4 Cup of the Chocolate Chips in small microwave safe bowl and microwave for approx 60 seconds to melt. Stir chocolate. Continue to microwave then stir in 30 second intervals until melted. With spoon, drizzle melted chocolate over the rice krispy treats. Sprinkle remaining 1/4 Cup Chocolate Chips over the rice krispy treats.
Allow time for the chocolate to set up prior to serving, or pop in the fridge for about 10-15 minutes to speed up the process. Cut and serve. It’s that simple!!! I think these would be really good with just regular rice krispies too but when I asked for thoughts at the party I brought them to, I was told not to change a thing.
